Guinness Beef And Colcannon Cottage Pie

The ultimate gaelic pairing! Colcannon topping a Guinness pie.
Instructions:
1. Brown beef and place in deep sided gastronorm.
2. Sauté mushrooms and shallots and add to beef. Repeat with speck and garlic.
3. Add Guinness, stock, Leggo’s Tomato Paste, thyme and bay leaves. Place in a commercial fan forced oven on low heat until tender.
4. Sauté cabbage in butter. Prepare Edgell Mash Potato following packet directions. Mix with cabbage.
5. Divide beef between serving dishes and quenelle colcannon mash on top before serving.
